FRENCH ROASTED CHICKEN

Preheat oven to 375°F.

Use a level 1/3 cup of Pasta & Co Herb Rub for a 3-pound chicken.

Clean, trim and rinse chicken. Pat dry with a paper towel. Evenly distribute 2 tablespoons of rub inside chicken cavity. Evenly distribute remaining rub on the exterior of the chicken. Truss chicken and place breast up on a baking sheet (a rack is optional).

Bake for 35 minutes, rotate the baking sheet and continue to bake for 1 hour or until chicken reaches an internal temperature of 165°F.
