DELI FAVORITES FOR THE HOLIDAYS
Favorite foods make coming home for the holidays special for all of us. From traditional classics--the ‘must haves’ on the menu--to new dishes with a twist, Pasta & Co’s holiday deli selection offers a range of dishes to please everyone. Our holiday main dishes start with November’s super-star--tender, moist HOUSE-ROASTED TURKEY BREAST that’s superb for festive dinners from now through the New Year. We’re also stocking holiday dinner essentials to serve with turkey including: STUFFING 101, a herb-seasoned, buttery bread stuffing, and traditional TURKEY GRAVY made simply delicious from turkey stock and roasted turkey pan drippings. You can trust Pasta & Co to be serving the best holiday side dishes in town. Choose from AUTUMN ROASTED VEGETABLES WITH FENNEL, which combines butternut squash, onion and red peppers tossed with herbs and olive oil, and roasted until their edges caramelize. OVEN-ROASTED DELICATA SQUASH is another excellent dish featuring pretty slices of the bright yellow and green-striped creamy squash seasoned with olive oil, salt and pepper. For Brussels sprouts fans, there’s a new preparation: ROASTED BRUSSELS SPROUTS, halved baby sprouts roasted with onions, salt and pepper and olive oil. To please all ages, serve PAN-SEARED BROCCOLI, a simple preparation where spears of broccoli are seared in butter, then briefly steamed until tender to bring out their rich, bright flavor.
Count on us to remember carrots too, with three outstanding choices. For traditionalists, there’s SWEET POTATO AND CARROT PURÉE, our interpretation of the Thanksgiving classic and a ‘must have’ dish that combines mashed carrots with creamy sweet potatoes. CARROTS WITH ORANGE GLAZE is also a colorful presentation of cut carrots tossed in a slightly sweet, tangy citrus coating. PAPRIKA CARROTS features carrots blanched until crisp-tender, then tossed in lemon juice, olive oil, paprika and garlic.

Our store shelves are brimming with good things for holiday cooking and gift giving--and eating! Reviewed by our Culinary Council, all passed their all-important, essential taste test with flying colors (if they were edible). Topping the list of favorites are Nuts+Nuts gourmet ROASTED SPICY CASHEWS and ROASTED HONEY SESAME CASHEWS, ready to nibble with cocktails or munch before a meal. When unexpected guests pop in, we’ve got the solution. Stock up on Olivier’s subtly flavored WHITE BEAN DIP and RED BELL PEPPER PEPPERONATA. KURT'S KITCHEN WISDOM
Cauliflower is one of those forgotten vegetables that masquerades as bland, but add some seasonings such as lemon and capers, and it sizzles with a whole new personality. That’s what we did in this easy recipe from our cookbook, PURE FLAVOR: 125 Fresh All-American Recipes From the Pacific Northwest. The result is one of my all-time faves, and it can span the holiday table from side dish to appetizer.
1 head cauliflower (approximately 2 pounds), cut into 1-1/2 inch florets
1/ 2 cup extra-virgin olive oil
1/2 small red onion, minced
1 1/2 tablespoons capers, drained and mashed
2 tablespoons pureed preserved lemons
1 1/2 tablespoons freshly squeezed lemon juice
2 1/4 teaspoons kosher salt
1 1/4 teaspoons freshly ground black pepper
Bring a large stockpot of salted water to a boil. Add the cauliflower and cook for 2 minutes, or until tender. (A fork should easily pierce the cauliflower but not break it apart.) Drain the cauliflower and rinse it under cold water.
Combine the olive oil, onion, capers, preserved lemon, lemon juice, salt, and pepper in a large bowl. Add the cauliflower and mix well. Marinate at least 1 hour at room temperature, tossing once or twice. Garnish with parsley and serve at room temperature as an appetizer or side dish.
Notes: You can find preserved lemons in the pantry section at Pasta & Co and other specialty food stores. If you can’t find them, substitute 2 tablespoons lemon juice, 1/2 teaspoon sugar, and add kosher salt to taste.The cauliflower will keep, covered, for 2 days in the refrigerator; toss it again before serving.
