Come in out of the cold, dark and wet, and pull a chair up to the table for a hearty meal with friends. This is the season when good food takes the spotlight, when entertaining abounds, and family traditions are remembered and followed with delight. We're serving your favorites for Pasta & Co's winter deli menu. We're ready to assist with all your holiday entertaining needs so you can enjoy the festivities, and we've stocked our stores with delicious, edible choices for easy gift giving.
Along with our commitment to serving only pure and all-natural foods in our stores, we're making a move to ensure all our packaging and serving containers are made from environmentally friendly materials. From now on, we'll be serving from the deli in biodegradable containers that can go directly into your yard waste. The plastic tubs will still be on hand for special requests, and whether paper or plastic, our containers are all recyclable and microwaveable for easy re-heating.
We're also highlighting Pasta & Co's Wine Program this season. It's something we're very proud of since it's based on direct knowledge of our region's wineries and winemakers. The Pacific Northwest offers a wealth of artisan winemakers, many which offer small-batch, one-of-a-kind varietals. We're meeting them face-to-face and tasting every wine before we offer it in our stores. Stock will be limited, but these are wines difficult to find anywhere else. When visiting our stores, we invite you to sample wines before you buy – or enjoy a glass in the store with your meal. It's a Northwest taste adventure we're thrilled to share with you.

Take Home and Heat a Complete Thanksgiving or December Feast
Give us a call! We're here to make holiday entertaining convenient and delicious. From appetizers to dessert, we have all the dishes you'll need to create superb meals in November and December. Simply add guests, cutlery, serving plates, and a festive mood to enjoy splendid holiday meals all season long.
From October 29 through November 19, Pasta & Co's complete Thanksgiving Dinner is available to order with a traditional menu that generously serves 6 to 8 persons. You can roast your own turkey ($99 for the complete dinner without the bird), or feast on our succulent brined turkey breast ($139 includes turkey). Our complete Thanksgiving menu includes: House Roasted Turkey Breast, Gravy, Cranberry Sauce, Roasted Garlic Mashed Potatoes, Sweet Potato and Carrot Purée, Macrina Bakery Potato Rolls, one vegetable choice (Pan Seared Broccoli, Spinach Gratin, or Brussels Sprouts with Garlic Bread Crumbs) and choice of dessert (Pumpkin Cheesecake or Glazed Pumpkin Spice Bundt Cake).
Call or stop by to place your Thanksgiving order by November 19; pick it up by closing time on November 21.
From November 23 through December 28, we'll again offer our elegant Holiday Dinner to go. The tantalizing menu is generously portioned to serve 6 persons. For the main entrée, you can choose between our Roasted Beef Tenderloin with Horseradish Cream Sauce ($179), House Roasted Turkey Breast with Gravy ($139), or select the complete dinner without an entrée ($89). The Holiday menu accompaniments include: Wild Rice Soup, Roasted Garlic Mashed Potatoes, one vegetable choice (Pan Seared Broccoli or Spinach Gratin), Macrina Bakery Potato Rolls, and choice of dessert (Peppermint Cheesecake or Seasonal Holiday Cake).
For December 25 meals, place your order by December 22; pick it up by closing on December 24. For a festive New Year's Eve meal, place your order from November 23 through December 28; pick it up by closing on December 31.
Additional servings can be added for more guests on either meal option.
GREATEST HOLIDAY HITS FROM THE DELI
Entertaining is on everyone's mind this time of year, whether it's a formal affair for 12, or a casual get-together with friends and family. We make it easy to celebrate the season with Pasta & Co's boldly flavored, convenient dishes, a selection of "Greatest Hits" everyone loves. Select a complete menu, or complement your own main dish with our salads and sides.
On dark and stormy winter nights, few things are more inviting than a cozy house and comfort food on the table. Take home our AUTUMN POTPIE WITH HERB CROUTON TOPPING, a dish with unrivaled appeal. We've packed our version with chunky white chicken breast meat and assorted vegetables bathed in a savory sauce almost "like grandma used to make." TURKEY PICCATA, our twist on the classic Italian dish with veal, also stars as a winter main dish. We've used our own brined turkey cutlets and dressed them with a salty-citrus sauce to highlight their mild flavor.
And after a day on the slopes, LAMB STEW WITH HERBS DE PROVENCE is guaranteed to warm any chilled body. Made with herb-crusted, boneless leg of lamb and carrots simmered in a tomato-based sauce seasoned with herbs, garlic, onion, and paprika, this dish is a winner in all our stores.
Since it's soup season, too, we brought back the popular FARRO SOUP WITH ITALIAN SAUSAGE. Made with farro, the Italian name for the ancient grain also called spelt, plus diced onions, carrots, celery, and browned, crumbled Italian sausage, this is one rib-tickling soup. Serve it with a green or citrus salad and crusty bread, and you'll have dinner ready in no time.
Most of us can manage turkey or a roast when it's time to entertain, but what about side dishes? More is merrier, so we've got you covered there, too. Among the most popular is SMASHED YUKONS WITH SMOKY BLUE CHEESE, a blend of creamy mashed potatoes flavored with award-winning Rogue Creamery's Smokey Blue cheese and smoked mozzarella. If you want leftovers, pick up an extra serving because this one goes fast.
For traditionalists, we're serving SWEET POTATO AND CARROT PURÉE, our interpretation of the Thanksgiving classic. We've added mashed carrots to creamy sweet potatoes with sweet, tangy citrus notes from oranges. There's also our famous CRANBERRY SAUCE, a must at every holiday table when turkey is served. Made in our kitchens with cranberries from Oregon, we've added a splash of rum to deepen the flavor of cranberries and dried sour cherries. Vegetable lovers gather round! We're serving ROASTED VEGETABLES WITH CELERY ROOT, a medley of butternut squash, onion, celery root, and red peppers tossed with herbs, olive oil, then roasted until the edges caramelize. The ROASTED VEGETABLES WITH FENNEL version includes the same terrific mix of roasted veggies, but with fennel substituted for celery root. Our KALE AND BROWN RICE GRATIN is a baked casserole combining brown rice cooked in milk, spices, and Beecher's Flagship cheese topped with a layer of seasoned kale.

KURT'S KITCHEN WISDOM
Why serve cranberry sauce just during the holidays? Really, this stuff is so tasty and versatile it deserves a place at the table year-round. On hamburgers? With short ribs? We give our version an extra boost of flavor by adding a splash of rum and stewing dried sour cherries with fresh cranberries. You'll find the cherries in the bulk food section of many grocery stores.
OUR FAVORITE PANTRY PICKS
Treats and sweets! We've discovered some of the best so there are plenty of extra good things on our store shelves for stocking your holiday pantry and for gift giving. We're carrying a CLASSIC PANFORTE, the beloved Italian confection combining honey, hazelnuts, almonds, citron, and spices. It's imported from Italy just for the holidays by Seattle-based Ritrovo®, an importer working with Italian artisanal producers. It doesn't get more authentic. We also have an exclusive clean version of PEPPERMINT CRUNCH made just for us by Barque Chocolates in LA. Leave some out of this peppermint-flavored, premium Belgian chocolate out for Santa, but share the rest only with special friends (or buy a double batch). It's very, very good.
When pouring holiday libations, we've found something new to create stylish, all-natural cocktails: A trio of fruity mixers. Brewed in the Napa Valley, MIXERZ COSMO, POMEGRANATE, and SOUR APPLE each blend high quality juices in a classic cocktail mixer. Buy one of each.
For cooks of all aspirations, two "must haves" for this season are GRAPESEED OIL MERLOT and GRAPESEED OIL REISLING. These extra-virgin oils are cold-pressed from 100% varietal grape-seeds from the Northwest. The Merlot is a robust and complex to the Riesling's mild, elegant flavors, and both add sophistication to any meal as a marinade or dressing.
Cookie decorators now have more clean products available, too. India Tree, the Seattle-based purveyor of fine spices from around the world, offers NATURAL FOOD COLORINGS made with no additives or artificial dyes. A tad more subtle than synthetic colors, they're every bit as festive. India Tree's tiny SNOWFLAKE decorating sprinkles are enchanting on cut out sugar cookies. And if you need inspiration to bake a batch or two, take home the RUDOLF COOKIE CUTTER SET. Cookies baked from these special 3-D plastic cutters can be assembled to make eight stand-up figures including Rudolf, Santa, a reindeer, sleigh, and a snowman. Think of the fun kids will have with these cutters at a cookie baking party!
FRESH CRANBERRY SAUCE (from PURE FLAVOR cookbook, p. 240)
In a large saucepan, combine the cranberries, sour cherries, sugar, and 1/2 cup water. Over medium-low heat, bring the mixture to a simmer and cook, stirring occasionally, about 5 to 7 minutes, or until the cranberries begin to pop. The cranberries should be tender but not mushy.
Remove the sauce from the heat and stir in the rum. Cool the sauce to room temperature and refrigerate it overnight to thicken. (You can eat the cranberry sauce the same day, once it cools to room temperature.) Bring the sauce to room temperature before serving. Made ahead, the sauce will keep, covered, in the refrigerator for up to 3 months.
